Carved into the slopes of Monte Igueldo above the Bay of Biscay, Akelarre is a 22-room hillside retreat where Pedro Subijana's three-Michelin-starred restaurant came first and the hotel followed in 2017. The architecture, by Mecanismo Studio, is low-slung and embedded in the landscape; interiors lean minimal and meditative, with noble woods, light tones, and outward-facing rooms angled at the Cantabrian sea. Beyond the flagship dining room, there's the more relaxed Espacio Oteiza and an 800-square-metre spa using Sisley Paris and Valmont.
