Carved into the slopes of Monte Igueldo above the Bay of Biscay, Akelarre is a 22-room hillside retreat where Pedro Subijana's three-Michelin-starred restaurant came first and the hotel followed in 2017. The architecture, by Mecanismo Studio, is low-slung and embedded in the landscape; interiors lean minimal and meditative, with noble woods, light tones, and outward-facing rooms angled at the Cantabrian sea. Beyond the flagship dining room, there's the more relaxed Espacio Oteiza and an 800-square-metre spa using Sisley Paris and Valmont. Service runs intuitive and familial, with the Subijana family genuinely present.

Families with young children should book elsewhere; the hotel doesn't accept under-14s, and pets aren't allowed either. Travellers who want to walk out of the lobby into city buzz will find the Monte Igueldo perch isolating, and anyone indifferent to tasting menus is paying for something they won't fully use.
Bottom line
The cooking is the centre of gravity here, and the hotel exists to extend that experience into a quiet, sea-facing stay rather than compete with it. Book an Ocean Suite for the plunge pool and terrace, plan at least one dinner at the flagship and one looser meal at Espacio Oteiza, and treat the 2025 Urteurrena menu as the reason to come if you can catch it.
