Asher Adams occupies the restored 1908 Union Pacific Depot in downtown Salt Lake City, pairing French Second Empire brick and limestone with a new eight-story tower of 225 rooms (13 of them historic suites tucked into the original depot bones). The Grand Hall lobby, with 14-foot domed ceilings, original stained glass, terrazzo floors and Wild West murals, doubles as the social engine: live music, a vinyl set, a vintage photo booth, and a serious bar. Rouser handles the cooking around a Josper charcoal grill, No. 119 runs whiskey-forward and late, and Counterpart pours proper coffee. Service runs warm and improvisational, cowboy hats included.
