Hidden behind an archway in Palma's Old Quarter, this 24-room retreat occupies a 16th-century mansion that's lived previous lives as a family home and a convent school. Architects OHLAB led the restoration, layering contemporary pieces against vintage finds, with a suspended glass plunge pool on the roof that acts as an oculus, refracting light down the central stairwell. Expect a walled garden at the back, a rooftop deck with views across Palma, and a basement spa using Mallorcan GAIA products. Botànic, the in-house restaurant, is run by chef Andrés Benitez. Service is low-key, intuitive, and quietly efficient.
