Perched above Lake Geneva with the French Alps as backdrop, this 1909 palace hotel channels the grandeur of turn-of-the-century European spa resorts: vaulted salons, mosaic ceilings, and frescoed dining rooms, all refreshed in a 2015 renovation that softened the historic bones with clean lines and gentle palettes. The 150 rooms run blues, creams and grays with Carrara marble and restored wood. Les Fresques, the Michelin-starred restaurant under Patrice Vander, anchors the food offering, while the Evian Spa traces the journey of the local mineral water across snow rooms, hydro-circuits and cold plunges. Service is formal, polished, and unhurried.

Couples and well-heeled families who want Belle Époque grandeur with proper kit behind it: a serious Michelin kitchen, an ambitious spa, golf, tennis and lake activities through the wider Evian Resort. Children 13 and under stay free in their parents' room, and the kids' programme is genuinely thought through. Dress code leans jacket-and-watch.
Should look elsewhere:
Travellers after a casual, contemporary boutique mood will find the palace register stiff. The public spaces are heavily scented, which can be a problem for the fragrance-sensitive. And while there's a private pool and shuttle network, this isn't a beach resort, it's a lake and mountain property.
Bottom line
The headline act is the marriage of a serious Michelin kitchen with a genuinely destination-grade spa, inside a Belle Époque shell that has been quietly modernised rather than gutted. Book the Junior Suite Rotonde for the lake-and-Alps balcony view, plan at least one dinner at Les Fresques, and request Audrey for a massage. Summer adds L'Oliveraie to the dining roster.
