Set on the Caribbean shore in Playa del Carmen, Hotel Xcaret México is an all-inclusive on a different scale: 900 rooms spread across five "casas" themed on Mayan elements (fire, water, wind, earth and spiral), threaded by a navigable cenote river and ringed by seven pools, a private island and a calm lagoon. Ten restaurants run from Carlos Gaytán's seven-course Yucatecan tasting menu at Há to the market-style sprawl of Mercado de la Merced. The Muluk Spa is carved into limestone over the river.
