Perched at Imerovigli's high point on the caldera rim, this 22-key cave hotel is the quintessential whitewashed Santorini fantasy executed with restraint: domed dwellings carved into volcanic rock, gleaming tile floors, minimalist interiors, and a steep maze of stone steps connecting suites that appear to teeter over the cliff. CHROMA, the on-site restaurant, pulls non-guests in for modern Greek cooking with a sunset view, supported by an aperitivo bar for the overflow. The view and the cooking are what you're paying for, and both deliver: this is one of the most scenically sited hotels on the island, with a restaurant good enough that outside guests book in. Splurge on a renovated suite with a caldera-facing plunge pool if the budget stretches, since the public pool keeps short hours. Shoulder season softens both crowds and rates.
