Set on 50 acres outside Catskill, about two and a half hours from Manhattan, Piaule is a cluster of 24 glass-walled cabins raised on stilts among the cedars, with just five acres developed and hiking trails threading through the rest. The design language is Scandinavian-Japanese minimalism in stone, timber and glass, conceived by the homewares founders behind the Piaule brand. A detached cedar spa anchors the property with a saltwater lap pool, cold plunge, sauna, steam room and yoga studios. Service runs quiet and hands-off, present when summoned, invisible otherwise.

The people who get the most out of it value sauna-and-plunge rituals, long hikes at Kaaterskill Falls, slow afternoons on the terrace with a beer, and rooms that genuinely feel like an architectural object rather than a hotel suite.

Anyone wanting full-service luxury, a proper restaurant, or a buzzy bar scene. There is no lunch or dinner on site, the mini bar holds only tea and coffee, and you need a car for everything. Families with young, exuberant kids will feel out of step with the vibe.

The pull here is a deeply considered design-and-nature experience at a price (from $499) that undersells what's been built. Book a cabin for a long weekend with a partner or close friends, plan to drive in groceries and wine, and aim for shoulder season or winter when the cabins read as cocoons. Don't come expecting a kitchen or nightlife.
