Set on a 750-acre estate in tiny Chocholá, 25 miles southwest of Mérida, Chablé Yucatán pairs a meticulously restored colonial hacienda with 38 contemporary casitas by architect Jorge Borga, each over 2,100 square feet with its own private pool and walls of glass framing a thickly planted jungle. The hacienda's old machine hall now houses Ixi'im, a destination kitchen with a tequila cellar of more than 3,500 bottles, while the spa builds Mayan ritual (copal blessings, a temezcal, a treatment room over a cenote) into its programme. Service is warm and genuinely curious rather than starched.

Couples after a quiet, design-literate jungle retreat with serious cooking, a substantive spa, and easy access to Uxmal, Mérida, and lesser-visited Mayan sites. Food-minded travellers will get the most out of Ixi'im, the cochinita pibil unearthing, and the regional Yucatecan dishes at Ki'ol. Families now have a foothold too, with a 2024 kids' club, petting zoo, and two-bedroom casitas.
Should look elsewhere:
Anyone wanting a beach should book on the Quintana Roo coast instead; this is inland jungle. Travellers sensitive to price will find rates and food costs the highest in the state by a wide margin, and the off-the-beaten-path setting means Chocholá itself offers little once you step outside the gates.
Bottom line
What defines a stay here is the rare alignment of a restored hacienda, jungle-buried private-pool casitas, and ambitious Yucatecan cooking, all delivered with unforced, knowledgeable service. Pay the premium if you care about food, design, and Mayan culture over beach time; book a one-bedroom Casita for the architecture, or a two-bedroom if travelling with kids, and pair the visit with Uxmal.
